This shape is inspired by the Mount Vesuvius. Vesuvio has a lively, springy texture that captures sauce in each swirl. Our Vesuvio are made with bolted organic spelt flour grown in Trumansburg, NY. Only the coarse bran is removed, leaving the nutrient-rich germ intact. Spelt is an ancient grain with a subtle sweet, nutty flavor. We love it with vibrant pesto or a spicy pomodoro sauce.
Each batch is bronze-extruded and dried slowly at low temperatures to preserve the grain’s flavor and integrity.
