Like most pasta, this shape goes by many names - most commonly garganelli or torchietti, meaning “little torches.” Traditionally, garganelli are hand-rolled from an egg dough, while our torchietti are extruded through bronze dies and made simply from flour and water. Crafted with organic, stone-ground spelt flour that has been bolted to remove most of the coarse bran, this pasta highlights spelt’s subtle sweetness and gentle nuttiness. Its ridged surface helps capture any sauce - try it with a creamy mushroom sauce, classic pomodoro, or a puttanesca sauce made from pantry staples.
Each batch is bronze-extruded and dried slowly at low temperatures to preserve the grain’s flavor and integrity.
