Salsa di Noci is a traditional creamy walnut sauce from the Laguria region of Italy. This sauce is made with cream, walnuts, pecorino cheese, garlic and fresh marjoram. You must be aware of one important rule when preparing this sauce... do not cook it! Salsa di Noci is considered a salsa cruda (raw sauce) and is intended to be used in its raw form to preserve its flavor. If serving this with pasta, use the bowl method: Place your desired quantity of sauce in a large mixing bowl. Cook your pasta as per usual. Remove pasta from boiling water and add to the mixing bowl of sauce along with a small amount of pasta water. Toss to combine and adjust seasoning, if desired. 

Ingredients: Walnuts, heavy cream, extra virgin olive oil, pecorino cheese, breadcrumb, garlic, salt, marjoram, black pepper.
