Our Pappardelle is made from a blend of Spring and Winter wheat. This flour is milled very fine and bolted to remove the corse bran only, leaving the germ intact. 

Horse Shoe Ranch (Pottstown, PA), supplies us with delicious eggs from truly pastured hens. Brian & Brittany’s eggs have a beautiful orange yolk which give our dough vibrant color and flavor.

To form our Pappardelle, we take the dough through a series of mixing, resting and sheeting steps. This process takes time and patience, but gives our pasta a rough texture that helps sauce cling to it. Once the dough is ready, it’s cut to size and packaged by hand. Serve this with our ragu Bolognese, or simply butter and cheese. If your pocketbook allows, a gratuitous shaving of white or black truffle would put this over the top.
