Like most pasta, this shape goes by many names - the most common of which are malloreddus and gnocchetti sardi (Sardinian Gnocchi). These are not made with potato, just flour & water. Although small, (about the width of a nickel) this shape offers a pleasant chew. Our Gnocchetti Sardi are made with organic stone ground spring wheat flour grown in Trumansburg, NY. We enjoy this shape in many ways, try them with a sausage ragu, broccoli with white beans, braised lentils, or add them to a soup.
