This batch of fresh fusilli is made with organic Einkorn grown in Trumansburg, NY. With origins in the Fertile Crescent, Einkorn is one of the earliest cultivated grains known to man. Einkorn has a distinct aroma of straw and cut grass. There's clearly a more vibrant yellow pigment in this grain - similar to durum or Khorasan. The flavor is deeply nutty. This pasta pairs particularly well with pesto or a pomodoro sauce.
