This filling is essentially a lightly modified version of our meatball recipe with a considerable amount of aged cheese added. The beef is sourced from
Happy Valley Meat Company (Brooklyn, NY). Happy Valley works with a local cooperative of farmers in Eastern PA, NJ, & NY state who share the same vision of providing ethically-raised meat for the community. For this batch we used Pecorino Romano cheese. We like to pair these with our pomodoro sauce or fresh cherry tomatoes cooked down with olive oil, garlic, and basil.
Our pasta dough is made with organic spring wheat and pastured eggs from Horseshoe Ranch.
