Spaghettoni is the slightly thicker cousin of spaghetti. At 2.5mm in diameter, this shape offers a pleasant chew not often found in fresh pasta. One of our favorite dishes to prepare with spaghettoni is carbonara (guanciale, eggs, and salty pecorino) simply because it utilizes ingredients that we always have on hand and can convert into a delicious meal in under 15 minutes.
Our Spaghettoni is made with organic Einkorn grown in Trumansburg, NY. With origins in the Fertile Crescent, Einkorn is one of the earliest cultivated grains known to man. Einkorn has a distinct aroma of straw and cut grass. There's clearly a more vibrant yellow pigment in this grain - similar to durum or Khorasan. The flavor is deeply nutty.
