This week we sourced organic honeynut squash from Ola and George at Taproot Farm (Shoemakersville, PA). Honeynut squash looks similar to the more common butternut but is significantly smaller in size and considerably sweeter. Kobocha is a winter squash similar to pumpkin. This variety has a nutty flavor with a nice balance of sweet and savory. 

To make the filling we roast the squash, scoop out the orange flesh, and mix with Royer Mountain aged cheese, from Clover Creek Cheese Cellar (Williamsburg, PA). A hint of nutmeg, black pepper and lemon bring warmth and brightness to the filling. We suggest serving this with brown butter, fried sage, and a handful of chopped hazelnuts.
