Smoked Eggplant is the focus of this ravioli. We charred the skins of a few cases of organic eggplant from Taproot Farm (Shoemakersville, Pa). The slow roasted flesh is mixed with Royer Mountain aged cheese from Clover Creek Cheese Cellar (Williamsburg, PA) and smoked mozzarella from Caputo Brothers Creamery (Spring Grove PA). A hint of hickory salt is added to bring out the smokiness of the eggplant. Pair these with a simple pomodoro sauce.
Dough: Organic 00 flour, bolted organic Glenn wheat, Horseshoe Ranch pastured eggs. Filling: charred organic eggplant, Royer Mountain aged cheese, smoked mozzarella, hickory salt, black pepper, garlic.
