Our Vesuvio are slightly larger in size than the Trottole. This week we made them with bolted organic spelt flour milled by Farmer Ground Flour in Trumansburg, NY. Only the coarse bran is removed but the germ still remains. This pasta has a subtle nutty flavor without the bitterness of the bran. We like to pair this shape with pesto or a spicy pomodoro sauce.
