Like most pasta, this shape goes by many names - the most common of which are garganelli and torchietti (little torches). Traditionally garganelli is an egg dough pasta rolled by hand, while these torchietti are extruded through bronze dies and made of only flour and water. Our fresh torchietti is made with organic stone ground spelt flour which is bolted (or sifted) to remove most of the coarse bran. Spelt is an ancient grain with a subtle sweet and nutty flavor.
