Winter brings an abundance of citrus, so we're bringing back our candied lemon peal and ricotta ravioli. Our lemon ravioli features a whey-based cow's milk ricotta from Caputo Brothers Creamery (Spring Grove, PA) and Parmigiano Reggiano DOP cheese which has been aged for 24 months. Our own candied lemon peel adds a hint of brightness with just the right amount of acidity. In the winter we like to pair these with a simple butter sauce and lump crab or seared scallops. (please no red sauce on these).

Ingredients: Dough: Organic 00 flour, bolted Glenn wheat, Horseshoe Ranch pastures eggs. Filling: Caputo Brothers ricotta, Parmigiano Reggiano DOP cheese, lemon juice, candied lemon peel, lemon oil, honey, salt.
